Miguel Borja and Mateus Uribe were also on the scoresheet, with Diaz withdrawn in the 84th minute.
The victory keeps Colombia's hopes of reaching Qatar 2022 alive, heading into the final round of qualifiers.
Elsewhere in the CONMEBOL section, Alisson Becker recorded a clean sheet as Brazil beat Chile 4-0, with Fabinho appearing as an 82nd-minute substitute.
Neymar, Vinicius Junior, Philippe Coutinho and Richarlison netted the goals as the Seleção maintained their unbeaten record in World Cup qualifying.
